Good morning, all! The newest recipe is a request that my nephew made. He mentioned seeing Belgian red velvet waffles online and asked if I could make them so he could try them out. I love me some red velvet anything so obviously I had to oblige. So here we are! Belgian Red Velvet Waffles, they were amazing super easy to make, and it made a ton of waffles. We added some blueberries that offset the richness and added some tart. They were delicious and did not disappoint plus it fed my very large family.  

Here are my ingredients.

Note the texture and color. You can always add more red coloring if you want your waffles to be extra red.

The finished product. Warm, rich, and delicious!

Belgian Red Velvet Waffles

Prep Time: 10 minutes

Cook Time: 15 minutes

Total: 25 minutes

Amount: 15 waffles

Ingredients

  • 1 box of Belgian waffle mix
  • Cinnamon to taste
  • 5 tablespoons of cocoa powder
  • 3 tablespoons of red food coloring
  • 2 ½ vanilla
  • ¼ cup of butter milk
  • 2 cups of water
  • 1 egg
  • Toppings (optional) – blueberries, chocolate chips, bananas, strawberries, etc.

Instructions

  1. Mix your dry ingredients together
  2. Mix in your wet ingredients
  3. Spoon your batter into your waffle maker
  4. Plate and add optional toppings

Breakfast Casserole

As y’all know I am not the chef of the family and if there is a way that I can save time and energy while I cook, I am all about it. Casseroles are my favorite go to. They make a ton of food and require little effort to make, and they are always delicious. Breakfast casseroles are awesome for holidays like Thanksgiving and Christmas where you are already cooking all day and you don’t want to have to cook breakfast too. You can prep it the night before and then preheat your oven (which you will need to do for the turkey anyways) and toss it in there and boom! Breakfast for the family.

Gather all your ingredients.

Mix everything together.

And bake for an hour.

Breakfast Casserole

Prep Time: 15 minutes

Cook Time: 1 hour

Total: 1 hour and 15 minutes

Amount: 12 Servings

Ingredients

  • 1 pkg. of shredded hash browns
  • ¼ cup of butter
  • Season to taste
  • 12 eggs
  • 1 ½ cups of half and half
  • 1 cup of cheddar cheese
  • 1 cup of swiss cheese
  • 8 oz. of Ham (or bacon or sausage)
  • 1/3 cup of chopped green onions
  • Parsley (optional)

Instructions

  1. Preheat oven to 350 F
  2. Spray a 13 by 9-inch baking dish
  3. Spread hash browns at the bottom of pan (it is best to defrost the hash browns if frozen)
  4. Add eggs in a large bowl
  5. Stir in half and half, cheese, meat, green onions, parsley, and seasonings
  6. Pour evenly over hash browns
  7. Then bake for about an hour

Blueberry Cake Donuts

Hello all! I am excited to share a new recipe with you but first a little background. I love cake donuts and especially blueberry cake donuts. I decided to give it a shot at making them at home. Sadly, I had to order a donut tray and wait for that to come in but since it has arrived here is how I made homemade blueberry donuts.

First step is to collect your ingredients.

The last things I combined is melted butter and the blueberries.

I folded in the blueberries so they wouldn’t bust.

I left them on a rack to cool while I made the glaze.

I chose to use a lighter glaze but you can add more powdered sugar to thicken it up.

Blueberry Cake Donuts

Prep Time:  5 Minutes

Cook Time:  10 Minutes

Total: 15 Minutes

Amount:  20 Donuts

Ingredients:

1 ¼ cup of flour (used whole wheat because I m trying to be a little healthier)

1 teaspoon of baking powder

½ teaspoon of salt

¼ cup sugar

1 egg

½ cup of milk (any kind of milk will work almond or walnut)

1 teaspoon of vanilla

2 tablespoons of oil (any kind will due or melted butter)

1 cup of blueberries

For Glaze

2 cups powdered sugar

¼ cup of water

½ teaspoon vanilla

Instructions

  1. Preheat the oven to 350 F
  2. Combine flour, baking powder, salt, and sugar
  3. Stir in egg, milk, vanilla, and oil
  4. Fold in blueberries
  5. Pour into donut pan
  6. Bake for 9 to 10 minutes
  7. Cool then glaze

Banana Bread

Good morning all! Today I wanted to share will y’all a pretty regular recipe for my house. My fiancé loves bananas, but they tend to go bad so fast before they can all be consumed. I personally don’t like to waste food. It was how I was raised, and it almost physically hurts my to through away food. So, I make Banana Bread once or twice a month depending on the availability of over ripened bananas in my house. I love it because not only is it a great breakfast or dessert, but I also give it away if I have too much. I love to gift it to my family, friends, and coworkers so that they can enjoy but also, so it doesn’t go to waste. The best thing about baking is sharing it with others. So, they next time your family or you don’t eat your bananas make some bread and share the love!

Here is half of my dough with the chocolate chip. Those are my favorite.

My second half of the dough with walnuts. Those are Daniels favorite.

Banana Bread

Ingredients:

4 Ripe Bananas

1 Large egg

1 Tablespoon of Vanilla

3 Tablespoons of Brown Sugar

2 Tablespoons of Sugar

1 Teaspoon of Cinnamon

1 Teaspoon of Baking Power

1 Teaspoon of Baking Soda

½ Teaspoon of salt

1 ½ Cups of Flour

2 Tablespoons of Melted Unsalted Butter (If you use salted butter just skip the added salt)

Instructions:

  1. Preheat your oven to 350 degrees
  2. Mash your Bananas in a bowl (a fork works perfectly)
  3. Add all your ingredients and then mix
  4. Add your choice of chocolate chips or walnuts (I separated my dough and made both)
  5. Then pour into the mini loaf tins (If you use a regular loaf pan it will need to cook for 45 mins.)
  6. Bake for 30 mins
